Christmas parties. It's time. Ugly sweaters, weird food speared with a toothpick, and worst of all ... uncomfortably singing Christmas carols when you only know every third word. I mean, who knew there were so many verses to Silent Night?
My word of advice? Mouth "watermelon peanut butter" over and over, smile and bide your time til you can head for the door!
Josh's Spinach/Bacon Queso Dip:
1 lb Velveeta, cubed
4 oz Philadelphia Cream Cheese, cubed
1 can Ro*Tel (I prefer Hot)
8-10 slices crispy cooked bacon crumbled up
Slice up some spinach (half a package of frozen spinach that has been cooked and drained or a handful of spinach leaves chopped up nice and thin)
Put it all in a dish and microwave, stirring every couple of minutes until it comes together. It's a great holiday party winner! Served best with tortilla chips - and bring Kleenex if you use the hot Ro*tel!
